In the beginning I thought Garlock was pretty cool, but in the recent episodes of GL Simon nerves me :/
His battle against Viral was just too much for me, how could he have evolved so fast?

No problem!
I think Simon's just got more confidence in himself, I dunno. We've all seen how if he believes in himself the Gurren Lagann powers up big time. Maybe that's part of it?
